Homemade (light) mayonnaise

I prefer a lot more this mayonnaise instead of the ready-made one. According to me, it’s tastier and of course healthier. When you will see how easy it is to make it, you will never buy the ready-made one again. Finally I want to say that I prefer the “light” version, by adding the yogurt, which increase the quantity of mayo, but with less amount of oil. The yogurt gives a very smooth texture and a delicious taste. Let’s start!

Ingredients for aprox. 200-250 g mayonnaise

2 egg yolks (you can use just one as well)

150-200 ml sunflower oil

1 tsp mustard

200 g plenty yogurt

salt

juice from half lemon (optional)

Method

If you are using 2 eggs, boil then one hard. Using an electrical beater, first on a lower speed, mix the yolks together with the mustard and salt and then start to pour a little bit of oil at the time, increasing the speed to the highest one. Very important: pour a little bit of oil at a time! Otherwise you will ruin the mayo. If still it happened, then don’t’ worry, you can repair it by adding lemon juice. You can add lemon juice anyway, if you like it. I do so.

When you finished the oil, stop the mixer, add the yoghurt and mix gently.

The mayo is ready!

My tips:

  1. I’m using this mayo for all kind of salads: boeuf salad, smoked fish salad, mushrooms salad etc.

  2. For a special mayo, you can add a sprinkle of dry tarragon. My kids are saying that this is the McDonald’s mayo :)

  3. For the aioli (garlic sauce) add for each 100 g mayo a crushed clove of garlic.
