Best-ever tiramisu

Many years ago, when I saw on a TV-program this recipe and the people who were there said this is the best-ever and simplest tiramisu, I became curious and I wanted to try it. They were right! According to me, the secret is in the syrup for the lady-fingers and that's why I advise you to use high quality ingredients, especially for the cognac, brandy or marsala. You will see how easy it is to prepare it and about the taste is useless to tell you now; you will convince yourself by trying it. Let’s start!
Ingredients for aprox. 10 portions:

500 g mascarpone
4 eggs
200 g sugar
300 ml strong coffee
150 ml milk
1 vial rum-flavour
50/100 ml cognac or brandy
450 g lady-fingers (savoiardi) cookies
Cocoa powder
Method:

Beat the egg whites with the sugar, by using an electrical beater, until you cannot feel the sugar anymore. It takes a few minutes, just be patient.

Mix the mascarpone with the yolks, then fold gently the egg whites into this mixture.

The syrup: coffee, rum flavour, milk and cognac. Mix them all together.
Dip the lady-fingers one at a time, until soaked but not soggy. In a tray, arrange one layer cookies, one mascarpone mixture, one cookies and the last one mascarpone mixture. Dust generously with cocoa powder and refrigerate for at least 2 hours.

My tips:
Make a trial with one lady-finger to see how long you must deep it into the syrup. This depends on the type of the cookies you use. They have to be soaked but not soggy.
You can spread cocoa powder just before you serve the tiramisu, but I prefer to do this before refrigerating. By this way the cacao becomes a little bit moisture, with a nice texture.
You can use Marsala instead of cognac or brandy.
