Pasta with fresh salmon and shrimps

I love this recipe because it's very easy to prepare and it's full of flavours. This is also a very good solution for the problem of eating fish in my family. Pasta is very appreciated by my kids, but the fish not quite, so with this recipe problem has disappeared.
As you will see, the combination between the garlic, lemon and the sweetness of the crème fraîche gives an extraordinary taste and above all, the aromatic herbs are coming to define the perfect aroma. So let's start!

Preparation: 10 min
Marinating: minimum 30 min
Cooking: 15 min

Ingredients for 4 persons
400-500 g fresh salmon fillet
250 g frozen shrimps
500 g pasta
100 g grated cheese
200 g crème fraîche
Fresh chive and basil
For the marinade
Juice from 1 lemon
3-4 cloves of garlic
1-2 tbs dried aromatic herbs like: basil, parsley, dill, rosemary
3-4 tbs olive oil
Salt and pepper
Parmesan to serve
Method

The marinade
Crush the garlic in a bowl, add the herbs, salt and pepper and crush them all together. Add the olive oil, continue to mix, adding the lemon juice too.

Remove the fish skin, if existing, and then cut the fillet in cubes, not too small, otherwise they will crush easily during cooking. Put the fish in the marinade and mix gently. Leave it in the fridge for at least 30 min.
Cooking

Warm up a big pan and add the frozen shrimps. Leave them on a medium heat approx. 5 min, mixing from time to time. Drain the shrimps, put them back in the pan, on the heat and add the fish together with the marinade. Mix gently from time to time. After about 5 min add some water (2 small ladles) from the pasta’s pot and cook for another 5 min.
Meanwhile, cook the pasta according to the pack instructions in a large pot of boiling salted water.
Add the crème fraîche and the cheese to the fish & shrimp sauce and cook it one more minute.
Add the pastas to the sauce, add some fine cut fresh chive and basil and mix gently in order not to break the fish cubes too much.
The pasta with salmon and shrimps is ready! Serve it immediately with grated Parmesan on top!

My tips:
For the marinade you can use all kinds of dry aromatic herbs: basil, parsley, dill, rosemary, oregano, thyme, chive.
How long the fish remains in the marinade, the better.
Cook the fish and the shrimps not too long, otherwise they will get dry.
